On this grey cold Sunday afternoon I have just made pumpkin muffins. I want to share this family recipe - the muffins are yummy, they are so easy to make, and home smells delicious from the baking! I love including recipes in my books (Apple Farmer Annie...Crepes by Suzette...recipes are also on my website) This one hasn't made it's way into a book yet, so here it is:
Mix together: 2 cups flour, 1 cup sugar, 1 teaspoon baking soda, 1/4 teaspoon baking powder, 2 teaspoons of spices (mixture of cinnamon, cloves, nutmeg)
Add: 1 small can of pumpkin (usually 15 oz), 1/3 cup vegetable oil, 2 eggs
Mix until just blended and spoon into greased muffin tins. Makes 12 muffins. Bake at 350 degrees for about 30 minutes (or until toothpick inserted comes out clean) I also love adding a few chocolate chips to the batter!
